Super Salads: Ricotta & Chive Caprese

Ricotta & Chive Caprese

An updated twist on the traditional caprese - this version with ricotta and chives is a perfect quick light meal and an easy dish to share with friends. Use large tomoato slices for a dramatic plating, or chop the tomatos and serve with bread!

1/2 cup fresh ricotta cheese crumbled
Heirloom or cherry tomatoes all varieties & colors, sliced to desired style
1 bunch of chives chopped with a Mezzaluna
Extra Virgin Olive Oil & Red Wine Vinegar
1 bunch of basil
Sale & Pepper to taste


Lay tomatoes on serving platter
Combine EVOO and Red wine vinegar, salt and pepper and whisk in separate bowl
Dress tomatoes and top with chives + basil
Finish with ricotta

Served in a New Norm Bowl with bread on a Ferm Living cutting board.
